Growing up in California has been great for so many reasons. Delicious foods like artichokes, oranges, and avocados are not very far down my list of favorites. It’s safe to say I’m in love with avocados (sorry future boyfriend). I could eat avocado with any meal. For breakfast I often make a piece of whole grain toast and spread half an avocado on top for something quick and filling on my way out the door. Sliced avocado is great as a side with eggs too if you have more time for breakfast. I love it on my salads, or as a base for a creamy salad dressing. That last one I learned from my sister Kate. Of course it’s great for guacamole, on sandwiches, in wraps, and plain. You really can’t go wrong with a ripe avocado, at least not in my experience. I grind lots of black pepper on basically everything I eat and I must say, avocado with pepper alone is perfection.
Does anyone not like avocado? Is there another versatile food I should try?
