Anyone who knows me can tell you that I have a major soft spot for cheese. I love to make a simple little cheese plate paired with crackers and turkey slices for a snack-like dinner once in awhile. A great cheese can bring any sandwich or salad to a whole new level for a quick lunch or dinner. One of my favorite cheeses is D’Affinois, a soft double-cream cow’s milk cheese from France. It’s great in a turkey sandwich with fig spread and arugula dressed in balsamic vinaigrette. For salads I like tossing in a bit of goat cheese to add creamy texture and a burst of flavor. When entertaining, you can’t go wrong with a cheese board appetizer. I always set out a basket of thinly sliced baguette and flavorful crackers, my favorites are the Rainforest Crisps in the fig and olive flavor. Adding labels is a nice touch so your guests know what they’re getting into. No one likes a box of chocolates without labels, the same goes for cheese.
